I don’t know about you but I love weekend breakfasts. I love weekends, but that’s the subject of another discussion. But I try to make a nice and special breakfast every Sunday morning that both hubs and I enjoy.
So when I looked in the fridge and saw this lonely can of Pillsbury crescent rolls, I knew I had to use it to make something delicious with it. This gorgeous breakfast ring came to mind and of course I always have bacon on hand, so I decided to make it with bacon. Did I tell you bacon is one of my favourite foods? I’m sure I did at some point in time.
How to Make Crescent Bacon Breakfast Ring
I love Pillsbury crescents, they’re so versatile and I make all kinds of things with them. Of course you could also make your own dough for this breakfast, but why slave in the kitchen when you don’t have to.
So this is such a quick breakfast and so delicious, you could literally use any ingredients. Perfect Sunday breakfast.
This breakfast ring is also perfect for brunch such as Easter brunch because it really is simple to make, hardest thing you have to do is fry some bacon and scramble the eggs.
What Ingredients Can You Use
Anything goes. Whatever you like for breakfast you can use here. Eggs, bacon, peppers, mushrooms, hash browns, ham, cheese, spinach, artichokes, asparagus. Use your favorite ingredients.
If using mushrooms, make sure you cook them first, so they don’t get watery and turn your crescent into a soggy mess.
Can You Make This Crescent Bacon Breakfast Ring Ahead?
You can absolutely make this the day before and then refrigerated until ready to bake.

Crescent Bacon Breakfast Ring

Ingredients
- 5 eggs
- ½ red bell pepper (chopped)
- ½ green bell pepper (chopped)
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon pepper (or to taste)
- 8 slices bacon (fried)
- 8 ounce crescent rolls (refrigerated, I used 1 can (8 oz) Pillsbury crescents)
- 1 cup cheddar cheese (shredded)
- 1 egg (for egg wash, optional)

Instructions
- Preheat oven to 375℉.
- In a bowl beat the eggs with the chopped peppers, salt and pepper. Cook the eggs in a skillet so that they’re scrambled. You can use the same skillet you used to fry the bacon, just drain the fat first.
- Lay out the crescent rolls on a parchment pepper, like a star as shown in the pictures above.
- On each crescent roll lay a piece of bacon. Add half of the cheese around the ring. Add the scrambled eggs around the ring and top with remainder of the cheese.
- Fold the crescents over. You may brush with the egg wash if you prefer, I did because it gives the ring a nice golden colour.
- Carefully transfer the parchment paper onto a baking sheet. Bake for 20 minutes or until the crescents are cooked and golden brown.
- Garnish with parsley, if preferred. Serve warm.
Notes
- Make ahead: This can be prepared the night before and refrigerated until ready to bake.
- Note: To make it easier to unroll the crescent rolls, do not take the tube out of the fridge until ready to use.

I had a hard time with the pastry but it came out great. I substituted chopped ham for bacon and smallcan of green chilis and some homemade salsa to the eggs. It was very tasty. Thank you for sharing your recipe.

Cooks a bit unevenly in the center circle since that’s where the filling is but still turned out great. Hard to fill without making a mess lol. Good meal for kids to help make!
I have never used parchment paper for baking before. The question I have is…do you JUST use parchment paper for this recipe or parchment paper on a cookie sheet? It was never clear, mine Looked really small, not too impressed..please let me know as I MAY try and make it again soon. Thanks
Sorry about the confusion, you transfer the ring with the parchment paper onto a baking sheet. I find it easier this way, or you can place the parchment paper directly on the baking sheet and assemble it there.

Winter storm forced us to cancel travel plans over Christmas. I had all the ingredients to make this for friends on the 26th. I decided to make this for husband and myself anyway. (1st time I made it.) Followed recipe exactly, it came out perfect. Looked just like the photo from Jo. I had fresh raspberries in fridge, but forgot about them. Would have been a nicer presentation and nice to nibble on berries. Instructions are 5 stars. Recipe is also 5. Adapt as you want, I’ll keep it as is, seems foolproof.

I was thinking adding tater tots, ham , sausage with the rest of recipy , is that ok?
Absolutely!
I pre-cooked #1 pork sausage instead of bacon. Drained well on paper towels. I used all the ingredients for scrambled eggs, but next time would leave out the milk. It made the mixture too runny. I had enough mixture for 2 wreaths. Good thing I had an extra tube of cans of Crescent rolls. I did increase the amount of cheddar cheese used. These were delicious. They baked in under the suggested time. Keep an eye on them so they don’t get too brown. Chopped ham and chicken could be alternative choices.
I’m thinking of making this for Christmas breakfast and would like to accentuate the Christmas wreath “angle.” I thought of using grape tomatoes, but my husband and daughter despise tomatoes. Do you have any alternate suggestions?
The tomatoes might make it soggy a bit, probably best if you leave it as is since it has red and green bell peppers, and it already looks great for Christmas as is. If you want you can serve it with some grape tomatoes in the center that way if they hate tomatoes they don’t have to eat them.
Hello! If I want to add sausage and tater tots then should they be precooked? Or uncooked?
Yes, I would precook the sausage, the tater tots might ok, as long as they’re not too frozen, 20 minutes should be enough to cook them.

Yes, you can. I’d wrap it tightly with plastic wrap then aluminum foil and freeze for up to 3 months.

Great question. For the best results, I recommend baking the crescent bacon breakfast ring first, then allowing it to cool completely before freezing. This way, the pastry has a chance to cook properly and develop its full texture and flavor. When you’re ready to serve it, defrost in the refrigerator overnight then warm it through in a preheated oven at 350°F (175°C) for about 10-15 minutes or until heated through. This should give you a breakfast ring that’s just as delicious as when you first made it.
I love this recipe! Make it as is and modified it using pork sausage broken up and mixed with eggs and peppers. Added mushrooms too! Absolutely delicious both ways. It’s my go to for family gatherings. Love it!!
