Easy Sweet Potato Hash Recipe
One of my favorite things about weekends is the big breakfasts! But big breakfasts don’t have to mean hours in the kitchen. In fact, if you’ve already tried some of my other breakfast recipes like my tasty Shakshuka or my Spanish Migas then you know I’m all about lots of flavor in very little time. So this Sweet Potato Hash just like my Sausage Potato Hash follows that same idea of delicious comfort food that is easy to make.
But what I really love about this sweet potato hash recipe is not only how easy it is to make, but how the smoked sausage and cumin transform a simple hash into an unbelievable savory dish bursting with flavor. Don’t get me wrong the onions and bell peppers are stars too, but the sausage really steals the show here. However, while I love the sausage in the dish, this recipe is flexible and you can use any type of breakfast meat or veggies you like.

- Olive Oil – I like to use olive oil, but a vegetable oil like avocado oil is another option.
- Seasonings – Salt and black pepper are used to season and bring the flavors of the dish together.
- Parsley – Freshly chopped parsley is used to garnish the hash. Other herbs like cilantro can be used as well.
This easy one-pan sweet potato breakfast hash takes just 20 minutes to make. All you have to do is follow these easy steps. And how the eggs are cooked is totally foolproof!
You need to make the hash before you can add the eggs. So to begin, heat the olive oil over medium heat in a large ovenproof skillet. Then add the onions and sweet potatoes and cook them together for about 7 minutes.
Next, add the bell peppers, sausage, cumin, salt, and black pepper. Then cook the mixture for another 7 minutes and stir from time to time.
Next, let’s add the eggs to finish the dish! To do this, crack the 4 eggs onto the top of the hash evenly spaced out. Then place the hash under the broiler for a couple of minutes to bake until the eggs are cooked to your liking. And that’s it! Perfectly cooked eggs.
Once the eggs are ready, remove the skillet from the oven and garnish the sweet potato hash with freshly chopped parsley. Now, serve the hash immediately and enjoy it with some hot sauce and homemade Flour Tortillas or yummy Cheddar Cheese Biscuits.
What Can I Add To The Hash?
You can pretty much add anything you like to the hash. Some sliced jalapeno for heat, garlic for more flavor, kale for a green veggie, or a sprinkle of cheese are all good options. A pinch of smoked paprika or oregano is also a nice addition along with the cumin for spice. And the recipe can be made vegetarian by using plant-based sausage as well as black beans. So feel free to be as creative as you like.
Can I Use Canned Sweet Potatoes?
Canned sweet potatoes cannot be used. However, you can use other types of raw potatoes if you don’t have any sweet potatoes on hand. Just keep in mind that the cooking time does vary for different types of potatoes.
Expert Tips
- Equal size cubes. The sweet potatoes need to be cut into cubes that are almost identical in size for even cooking. This also holds true for the other ingredients as well.
- Fully cook the potatoes. For the best texture, make sure that the sweet potatoes are fully cooked before adding the eggs to the hash.
- Watch the eggs. Once the eggs are added to the hash and put under the broiler you need to watch them closely so that they don’t overcook.
Storage
Leftover sweet potato hash will keep in the fridge for up to 5 days in an airtight container. To reheat, put it in the microwave for a few minutes on medium heat or reheat it in a skillet.

Sweet Potato Hash
Ingredients
- 2 tablespoons olive oil
- 2 cups sweet potatoes (cubed)
- 1 medium onion (chopped)
- ½ medium green bell pepper (chopped)
- ½ medium red bell pepper (chopped)
- ½ medium yellow bell pepper (chopped)
- 1 cup smoked sausage (cut into ½ inch pieces)
- 4 large eggs
- ½ teaspoon cumin (optional)
- salt and pepper ( to taste)
- 1 tablespoon fresh parsley (for garnish)

Instructions
- Preheat the oven to the broiler setting.
- In an ovenproof skillet heat the 2 tablespoons of olive oil over medium heat. Add the onions and the cubed sweet potatoes and cook for 7 minutes.
- Next, add the bell peppers, sausage, salt, pepper and cumin. Cook for an additional 7 minutes, stirring occasionally.
- Crack the 4 eggs on top of the hash, evenly spaced out. Transfer the skillet under the broiler for a couple minutes until the eggs are cooked to your liking.
- Garnish with parsley and black pepper, then serve.
