It was really good but I did add Italian seasoning and cracked some eggs on the top then covered to cook just for more flavor and a different texture! I used Yukon gold potatoes so I didn’t bother peeling them. Very yummy!

Made this for dinner with french sausage, frozen mixed veg and fresh tomatoes, plus the all-important fried egg on top. Absolutely delicious. I deliberately cooked extra to store for later, but it was so good I ended up finishing the whole thing! I’m a college student without access to an oven so it’s great to find warming, hearty recipes that can be made easily on the stovetop. Would definitely make this again.
